You have explained it beautifully and I totally agree with what you've written about Day. What doesn't sit well with me is how lightly series are including break ups and make ups. After this break up and as we saw at the end of the episode, Mhok's heart is absolutely broken and he is devastated. When it is not a mutual decision, break ups feel like a betrayal and in most cases, it leaves a huge baggage of distrust. So I find it tiring and unrealistic that these stories follow the sequence ’we take some time, we grow and then we get back together’. I find it as unrealistic as ‘I’m breaking up with you for your own good’. I wish Day’s growth and independence would have been written in another way and not in a time jump, each doing their own thing and then reuniting. Especially, after the breathtakingly beautiful love story they have had up until that point.
Just my point of view but I don't believe that Day was thinking about Mhok in his decision to break up. I think that he was scared of Mhok's feelings and the commitment it entail. Day's insecurities got the best of him, again. If you hear someone you love tell you about the kind of trauma that Mhok went through with his sister and disregard it completely and think : 'Yes, a job in Hawaii is what he needs.' Then, he really must be out of touch with reality.
I'm really liking the drama and the pacing, to me, was going perfect to wrap it all up in ten episodes. Now I'm a bit wary that there is going to be twelve episodes in total but let's see.
The future always involves a loveless marriage for Pear. First, Pisaeng and now Not. Let's hope that she ends happily married by the end of the series!

She has put, what I imagine, a lot of hard work, effort and care into this story, to the point that every detail is well thought out. So the thought that someone will not be able to understand absolutely all the nuances she has put in ‘Silent’ must be causing her distress. In my opinion, it is a mentality of ‘everything or nothing’ which honestly fits the drama. Sou, Nana and Minato have very similar mindsets.

The thing that "bothered" me in that scene is that, one, they are assuming Dew is gay just by his looks because in that world, unlike the parallel universe which is more clear, he hasn't stated his sexual preference and two, they are assuming that because Mint likes someone who in their eyes looks gay, that then she must be cherry.
Who told the truth to the judge: Eiang, Clara or Jun, about stabbing Captain Jean? We know Eiang put the poison in Jean's drink and that Choi gave her the poison but who stabbed him?
