I don't see JK as being overbearing or bossy. We know he's taken a (professional) interest in HJ from way back and he values her as a colleague. Then she confesses to him and he rejects her. They then coincidentally become neighbours (I don't think this is deliberate or that JK is creepy, btw. If he was REALLY creepy and controlling, he would have said YES to installing the cctv cams - and installed a few extra cams to spy on HJ).
He didn't think he's cut out for love, but HJ disarms him in a way he didn't expect, and he's being honest when he tells Shin Yu that he regrets rejecting HJ. Plus there's the irrefutable fact that he's single; Shin Yu's very much NOT.

I don't see HJ's response as fickle or hard-hearted. It's self-respect and self-preservation. In her situation, she's gonna cop the most criticism and public humiliation, plus she's got a case of past Nayeon-induced trauma, so she can't afford for even the smallest rumours to start circulating about her and SY.
And nothing SY has done so far has reassured her that he'll take HER side and not NaYeon's if the sh*t hit the ceiling. He hasn't even hinted about breaking up with NY again. So of course HJ wants to nip it in the bud by telling him his kiss meant nothing, etc.
On a side note, I think they're doing really well at conveying how SY's feelings have reached a new level of seriousness and sincerity. It was fun and games when he was following/ordering her around in the early stages of the spell aftereffects, spouting cheesy one-liners. But he's spent the past couple of eps not even talking to her or meeting her directly - and yet we can feel the depth of his longing!

So there's no 'logical' reason for him to go out of his way to protect or defend HJ, since they don't have that kind of relationship - but of course he does! 🤭 Plus he's not in the habit of acting on his emotions, and he's never been in love before. So I don't think his behaviour has been absolutely terrible - but I DO think he needs to start being straight with himself and everyone else about what he wants and doesn't want, like the hasty wedding, for starters!
