I was just wondering what language do they speak in Taiwanese dramas ?

Chinese of course. What else?

Cantonese/Mandarin?

I think Mandarin.

They speak Mandarin and sometimes they insert in Taiwanese Hokkien.

Toots that's not a surprise. In HongKong they speak kantonese chinese, but it's different from the kantonese chinese in China as well.
