Yes, thx RX! Remember when I used to get overwhelmed every time u posted updates? U haven't heard me whining here in a long time cuz I'm doing better now. 🤣
Day 16: FOOD!
Margarita pizza is my top choice but as a plant-based eater only I can't say I've had many vegan pizzas I like. My next fav is a sweet potato burger on a local bakery bun with lots of extras inside.
Other top favs: Ramen bowl with veggies & tofu, chickpea salad sandwich, veggie potato curry with rice, homemade red salsa/chips and homemade green goddess hummus/crackers/veggies. I fill burritos with black beans, roasted veggies and rice. I make bunches at a time to freeze for whenever. Microwave and top with salsa verde and lettuce, yum!
When I eat out it's usually Thai or vegan sushi. I drink H2O and lemon seltzer water.
I love talking about food & recipes, probably more than eating, lol. And I LOVE taking pics, so here's my show and tell of a few recent dinner favs, haha.
