Why so many differences in these drama regarding pronouns then?

as compared to English, does Chinese and other oriental languages have a hard time distinguishing between he/she/him/her etc, as see many times the husband called wife and visa versa?

What do you mean? Can you clarify? If you mean the translations on vertically filmed dramas, I don't think they're 100% done by real humans. I think part of it is AI.

When I watch especially Chinese dramas, many times the English  equivalents on the screen to the Chinese will call mr now Miss, her husband will now be called wife just seems like issues with using personal pronouns?

I actually asked ChatGPT about this some months ago, and if I remember correctly the answer was (amongst others) as pointed out above from lexa as well:
Machine translations often carries gender-biases, leading to a lot of wrong translations when context is missing (in the original text or dialogue) as to whether it is a female or male.
