The lunar new year is a celebration of the coming of new year according to the lunar calender (based on the moon cycles) it is also regarded as the spring festival, many Asian countries celebrate it, basically its the festival where all of your (extended) family gathers and celebrate the coming of the new year and there are several traditions across several regions
That being said the main point is that it's a family focused event and people are on holidays. So things like broadcasted programs get delayed so people can enjoy time with their family

Well most Sageuks that I have watch have similar pacing, but it could be that you're not use to this dramas with similar pacing or maybe that it is the drama but I haven't noticed
Even if he did, When she asked him about "helping" her, he clearly said No and that he did want to do it and rather died an unjust/shamefull death. Nonetheless, she still raped him when he was unconscious.
I kinda pitied her before this ep, but now, to me she just greedy and selfish
ngl despite the plotholes etc this was very entertaining
I agree usually I don't watch these types of dramas (with many plot holes, dumb main characters etc) but this one I found entertaining even with its flaws it was enjoyable
