I think it's because all long, Chae Song Ah knew that her relationship with the violin maker (Dong Yoon) wouldn't go anywhere, mostly because he is her best friend's ex. So, when Dong Yoon slept with his ex, that just severed the last romantic feelings she may have towards Dong Yoon.
Plus, the fact that there was a guy around her that always helped her, cared about her, showed her respect, accompanied her, went on dates, etc which probably moved her heart too – as people say, the best time to get someone's heart is when their heart is wavering (which is exactly the situation that Song Ah was in after she knew about the sleeping situation).
With these two situations combined, I won't be surprised if Song Ah moved that quickly. I'm guessing the internship period was 2-3 months? In that amount of time, I think it's pretty reasonable how fast Song Ah can get Dong Yoon and moved on to Joon Young, especially if you felt that your past love/crush was already doomed from the start.
