My opinion only, I think he fell in love with BH's characteristic/personality and not SY's. Although I don't mind if the King ends up with the real SY but it's really unfair for the king that the "one" he truly loves would leave him in the end. If indeed the BH's interview was supposed to be the ending and he's teary eyed/sad, then I am not really happy that they separated. I haven't seen the spin off yet so we don't know if SY's personality is close to BH's, but I have a feeling that the King (as I was saying from before) likes SY from the start but he doesn't trust her so he restrained himself from the chance of knowing the real SY.
