I suspect LuSi has learned a few tricks to showcase each of characters. She take on the new look, has everyone commenting about it, generating amazing buzz, film her drama, and then whomp! Another kind of look. Look at the period after this drama and then Love Ambition. And then suddenly, after that, her looks changed again and now she's filming another drama with a less film-star look that she took on for Love's Ambition.

Let's say she and Shrimp hid in Yan's ship and was caught and she was now in her predicament for some other reason (there is no pearl and looking for father storyline, just the ambition to succeed as a businesswoman), and then Jin Ran offered her this letter, with that promise of protection, would she then accept?
IMO, her personality would push her to say "no" because of her innate yearning for freedom. She had not known freedom all her life and saw it differently from those around her, esp. JinRan. But JinRan was attracted and tried very hard to understand. With the poem. With his respect of her. With this letter, he was showing that he wanted her to get what she was striving for (learning a craft), but of course, he had his own selfish reasons :).
