My theory is that Wang Shik helped her himself and then rushed back to the palace and since he needed an alibi and an excuse for not answering his phone, he played that little scene with the Empress.

I dont think this drama is solely about Hong Seol. The college life (and not only Hong Seols) is an important part of the drama but its just one aspect. While my favorite part was the Yoo Jungs jurney of getting to know himself and the world around him. so the ending was quite satisfying to me.
