If you had your watchlist available, I could avoid relisting dramas you've watched. It also gives a better idea of what you enjoy and what you don't, but here's my best guess:
I feel the same! Here are some dramas with iconic rescue sequences, so sorry if you've already seen them:
Love Like the Galaxy Part 1 and Part 2 - It has a lot of showy rescues - a classic save the FL at the Lantern Festival sequence, and more than one hanging from a very high place kinda sequence, and much more. Truly well written and filmed drama which unfortunately lost ten episodes of its resolution to a drastically shortened post-production schedule. I'm not sorry I watched it - it's one of my favorite dramas - but those lost episodes feel like a wound.
The King Eternal Monarch - One of my favorite rescues of all time, in a sequence that spans two episodes, puts the martial arts skilled FL in dire straits, with the villain arraying all his forces against her.
Healer - several incredible rescues. A complex drama that takes several episodes of setup, but the romance is more powerful because of all the exposition.
Shine On Me - the leads rescue each other from socially difficult situations. His rescuing is very appealing because he's courting her at the same time as he's rescuing her and she's slow to catch on. :) However, this drama starts out with a misunderstanding, so at first he's not very nice to her. But once you hit episode 10, his high emotional intelligence, quick wit, protectiveness, and warmth are all marveously on display.
The Yakuza Boss's Beloved - His rescuing capabilities are understandably impressive! (The title says it all!)
