Niu began his acting career at the age of 9, performing in TV dramas, and started directing in 2000. In 2002, he founded Red Bean Productions Co., Ltd. (紅豆製作股份有限公司), where he serves as the company's head.
Niu grew up living with his grandfather, General Zhang Zai Yu (張載宇), and his maternal uncle’s family in Jiahe New Village. His maternal great-grandfather, Kong Hua Qing (孔華清), was the governor of Shaanxi and Gansu. His grandmother and mother both taught Chinese at the National Taiwan Normal University (國立臺灣師範大學) Language Center. His third uncle, Niu Biao (钮骠), was the former vice president of the China National Academy of Chinese Theatre Arts (中国戏曲学院).
In June 2013, Niu was involved in a legal incident when he brought Chinese photographer Cao Yu (曹郁) into the Taiwan Navy’s Zuoying base to scout locations, violating Ministry of National Defense regulations. This led to allegations of violating the Fortress and Military Zone Act.
On February 1, 2019, Niu was indicted by the Taipei District Prosecutor’s Office (台北地檢署) for sexual assault, specifically for forcible intercourse with a female crew member on a film set. He was sentenced to four years in prison on April 14, 2020. The Supreme Court upheld the ruling on September 29, 2021, after rejecting his appeal.
