Just like Q tells Sunshine that he's from the past, I assume that Sunshine from the future was sent to the past to be Sky's reaper. That's the great thing about fiction, if doesn't have to make sense to our universe's laws.
I think that Sunshine was Sky's reaper FIRST, because Q definitely has some mixed feelings about Sunshine, especially asking to be assigned to him. Clearly, Sky remembers his reaper up until he is erased from Sunshine's timeline, but he only subconsciously recognized him on the plane. He probably remembered briefly about Sunshine, just like Sun did with Rain, but slowly forgot him.
I do wish they explained some stuff a little better (like maybe adding subtitles for written text so us non-Thai speakers could see that was Sunshine's candle). I feel like the show would have been rated better.

The simplest way I can think to explain this, is that Sun slowly started forgetting about Rain once he woke up the next morning, but it took him 24 hours to really forget him. Sun never fell asleep the night that he erased Q from his timeline. Instead, he stayed up all night and wrote down their 7 day story in his journal (he specifically asked Q if he was okay with him writing it all). Sky instinctively called Sun "Q", signifying that he was in-fact Sky's cupid in his timeline (not just going off the fact that you can see the bottom half of Atom's face in the story that Q tells Sun). Sky cannot seem to remember Sun, but he has had a longer time since the last wish than Sun has. Remember, Q refused to tell Sun whose name was on that last candle, but Sun says that he know that Q is the one that saved him while he's monologuing walking to the airport.
I think of it this way, Sun was Sky's cupid, but that was because it was Sun from the future AFTER he erased himself, which is why the candle blew itself out. That was Sun's candle. By Sky relighting it with his father's candle, it brought Sun back from the dead. By Sun choosing to erase "Q" from his timeline, this also brought Sky back from the dead in his own timeline. It's a little paradoxical, but it make sense. Sky is Sun's "Q" after he died, and Sun is Sky's "Q" after he died, but they each saved each other. "You are my future, and I am your past."

If you look closely while Q is telling his story to Sunshine, you see that Sunshine is actually the Reaper. I am assuming he's from the other timeline after Sunshine has erased himself from existence. The wind blew the other candle out, which was probably Sunshine's candle. Sky (or Q) didn't willingly blow it out, so he relit it with his father's candle, bringing Sunshine back. When Sunshine wished Q out of the timeline, I'm assuming this erased the fact that Sky offed himself in the other timeline as well. Now, Sky is returning to his studies abroad in the "snow covered country" and Sunshine is going on vacation. They called each other Q, because they were each other's cupids in their respective timelines.
