I find the grandfather to be actually a reasonable and dependable person who looks out for his family's well being without doing anything evil like others do in cdramas in the name of their family's prosperity.
He's just solely concerned about his family's survival and would bend his morals and bow down to the power to achieve it. There's nothing wrong about it. (As long as he's not committing atrocities fornthose in power to survive).
It's also reasonable that he had the engagement with Shen family nullified back then cause he knew Shen family most likely wouldn't bend their knees. It's also perfectly normal for him to dislike that ML married FL who us of lower class without even so much as a discussion.
If it weren't for the decisions he made in desperate situations, the ML's family would have suffered the same fate as the FL.
He understood that just being able to live is more important than empty reputation and your pride which FL grandfather never did making his entire family suffer catastrophe. In the end, the FL survives by chance and i think she should be able to understand his decision and agree with him if she really believes in her mother's last advice to survive.

I'm sure you have already watched it but if you haven't, then nothing tops nirvana in fire when it comes to mastermind male lead. Although it is a bit dated now but it is still the best cdramas when it comes to scheming male lead who is always a step ahead of his opponents.

Well there are a lot of them to list bit AOS isn't exactly a wuxia. It's more similar to Xuanhuan. It's recommended watching Evernight S1 first since it also has an underdog ML that grows strong.
However, be mindful that Cdramas and Kdramas have both different cultural settings so it could be little hard to transition.
Once you have become accustomed to watching cdramas, you can then try wuxia/pure martial arts dramas. A great statt would condor heroes series adaptations. I'd recommend starting with Heavenly sword and dragon slaying saber 2019 version.
Finally, if you start to truly enjoy cdramas after getting familiar with them, I'll recommend you watch Joy of life S1 and S2, and my all time favorite Nirvana in fire. These two are a bit low on the martial arts especially NIF but they are the best among cdramas for sure.
