I'd been putting off watching this show until I was in the mood for something I assumed would be heavy and slow-paced. So what a surprise this turned out to be!
While this drama is heartwarming and quite the tearjerker, it has enough dynamic and quirky moments to balance it out, keeping it from becoming a heavy and slow watch. I highly recommend this if your in the mood for a beautiful show which shows the true value of both family and friendship!

So skipping this one may be for the best. Because if you were already frustrated with the first couple of episodes, the following ones will most certainly break your patience.
The fact that Usagi's little flashback was to showcase her father's dream rather than hers simply exemplifies the issue I have with Japanese Dramas in general. :/

Those are good choices. Hotel de Luna is the one that's most similar to this one and I think you'll enjoy it. I can't stress enough the beautiful cinematography it boasts.
Catch the Ghost is very atypical in the way it handled the main leads, with the Male Lead following more of the typical path of Female Leads in K-Dramas (meaning his faces a ton of difficulties, is made to suffer and he's far from perfect. That all makes him relatable and very different from your typical Male Lead). There are things I didn't like about this show, such as the 2FL who was depicted very poorly with no redeeming traits (follows the evil ex trope down to a T). The 2ML was also a bit annoying. The FL was portrayed more like a typical Male Lead (hell-bent on reaching her goal without thinking about those around her). I appreciated that she was at least always active in resolving the plot, though. But I'll stress that the highlights are definitely the ML and the main antagonist.
Into the Ring is a weird show and you'll see that right away. I don't think it will be everyone's cup of tea, but it was entertaining for me. The Female Lead is quite actively involved in her plot, even if her character doesn't develop too much from where she started. One could even say she came full circle and ended where she started (you'll see why if you decide to give it a chance). Overall, it was a refreshing drama in that it sets it's own rythm rather than follow the formulas we've already seen before.

The Uncanny Counter is one of those few precious shows where it keeps getting better and better as it progresses. I feel the same with this show. Where it never dragged or regressed. I'm hoping that it will end on a high note, with a well-executed final so I can keep it at 10/10.
Flower of Evil is another show that never dragged. Mind you, a lot of people didn't like the last episode, but I really enjoyed it and found it was a fitting end to the drama.

I've updated the list to add Uncanny Counter, I hadn't added it originally because I assumed you were looking for some romance and that doesn't really have it. But it's amazing. There is a love story, but it's more in the shape of friendship rather than romance. Highly recommend!

1. Hotel de Luna | It has spectacular cinematography, a great story, and a lot of chemistry between the leads. 2. Flower of Evil | Amazing story, great cinematography, and flawless acting. 3. Lawless Lawyer | Has great action and a very equal & healthy relationship between the leads. 4. Hyena | I didn't like the acting so much, but the role reversal is very refreshing; with the female lead being a cutthroat-like character. 5. Mystic Pop-Up Bar | This has a very wholesome story and really the best part is the relationship between the three main characters.
Updated to add: Uncanny Counter | This has great cinematography but where it really shines is in how they portray friendship. Not only between the ML and this teammates/co-workers, but also with his childhood friends. It's very wholesome. There's a lot of action scenes too that involve getting rid of ghosts (as the main leads are grim reapers).

Responsibility as in really talked about what happened (what he did to her) and properly apologize -- from the bottom of his heart and not just to appease her).
The fact that once he realized who her father-in-law was, he blamed and ditched her speaks volumes of the fact that he still holds the power of their relationship. I very much doubt we'll get a proper talk between those characters in regards to that situation, as the writers are progressing their relationship by ignoring certain things (again, all the bad things he's done to her) that shouldn't be ignored instead of making proper amends and then constructing their relationship off of that.
In that sense, this drama reminds me of "The Princess' Man" which is another story I didn't enjoy (but which a lot of people did).
"She was raised as a filial Joseon daughter and Princess. Her choices were nonexistent about the marriage plans."
I am not arguing that she had a choice to marry. In fact, she did try to even escape her situation by asking the BIL to run away with her. However, we have been teased to the fact that both the King and the Father in Law are saying opposing stories regarding the choice of marriage for the Princess. King said it was the Chancellor who decided to switch the marriage proposal to his older son. But BIL mentioned that it was the King who changed the proposal to his older brother. So there's something there. Whether the writers will remember to give that a resolution is another matter. But it does show that the Princess story is not yet done (and shouldn't be).

Except that they haven't been written as equals yet. She is still with them at his mercy. The moment he tells her to leave, she will do it. UNLESS the writers have her properly confront the Ba Woo and discuss how it was HIM who wronged her and it's HIM who must take responsibility. This conversation hasn't really happened yet and I don't think it will because now she feels even more responsible towards him for what her family has done to him (even though she herself is blameless in all of this).

For me, she hasn't resolved her story yet. I mean, she hasn't even confronted her father about ignoring her, nor has she found out why her father-in-law decided to marry her with the older brother instead of the guy she actually liked. She also hasn't talked to her mother, who still believes her dead. There are still a lot of questions left to answer regarding her story. Whether we'll get any answers, we shall see. Right now she hasn't really found a steady place, since --for me-- she's basically still at the mercy of Ba Woo's mood swings. Correct me if I'm wrong, but if he tells her "to disappear" chances are she will do as told, since she still wrongly believes she's responsible for everything. When, in fact, it's Ba Woo who should take proper responsibility.
