Time concept don't work in a linear way but with a refresh of the loop. The juggler guy is a cool idea, but honestly, I would remove the "mafia" past, except if this drama is a full parody. In this case, the guy who makes the dough is a Joseon baker who traveled across time. :-)

My answer might surprise you, but it doesn't matter if someone will read it or not. If you believe in your ideas, that far outweighs any other form of motivation. In this case, your story will have a better chance of being read and appreciated because it will be authentic, without expecting anything other than to have accomplished the best of yourself.
To choose the proposed dramas. If I had to write it down, it will probably be none of those exactly, because they are the most immediate ideas and that requires to be twisted. The result can only be known after enough additional ideas have been developed. Everyone has to make their own personal choices, here are mine. I remove all proposals for which I have no knowledge and which make it very difficult to establish a credible context: everything that is historical and refers to the history of an Asian country, because I was not born there. - Historical Musical. - 1930s.
Then I take out everything that is very common and typical of a fan-fiction. - EXO the Movie. (to be banned absolutely!) - The Heist. (super-team principle, very used in FF, dramas based on it are mostly boring, the player, rugal, etc. Only "Mission Impossible" or the Canadian series "VIP hustlers" have caught my attention).
Hard to estimate. - The Fairytale. (may need some historical elements though, or at least to keep a sense of Asian fantasy, I don't feel fit for the subject) - The Spies. (probably the same problem as The Heist, plus I am unable to write a female team. Still, I could be Ok for a spy/action story, easily enough).
Most accessible and worthwhile: - Fashion Runway. (But I have no knowledge of fashion.) - The Rock. (watch out for the FF effect on this one) - The Duo.
Since I have no affinity with slice-of-life, that leaves "The Duo" as a base. Although I might have some ideas for "The Rock", having a knowledge of the music business. Or a very different version of "The Spies". Also "The Duo" is a good context to use other concepts, a breathtaking story with big plot-twists. That's my kind of thing!

There are people writing fan fiction, but hardly anyone writing a real drama script. I have searched a lot on the internet. You can find mostly movie screenplays, or TV show pilots. But not a complete drama (a beginning, an end, and 16 to XX episodes). These scripts are in the western format, not in the Asian format, which is much more friendly to write and read.
However, the time and work involved is extremely high. It will be difficult to do anything else with your free time, if you want to finish in less than two years. Even then, it will be very imperfect and will require a lot of editing.
There are many tips on story creation (I have a whole list!), but the only thing that really matters is your work, your imagination, and your total commitment to the project. If it's a story you half-believe in, it's much harder. But that's the case with many people who write, they're not involved. I know this from having written many stories that I loved, but wasn't fully involved in. And for many, I never finished them. If you're really involved, the ideas come pouring in so fast that it's almost unbearable to live with.
Unfortunately, I have a lot of trouble to find where to watch Japanese dramas, but I know they have the potential…

Unfortunately, I have a lot of trouble to find where to watch Japanese dramas, but I know they have the potential to be very twisted. Secret Love Affair is good, but the pace is slow. It is mature but reasonable. However quite scandalous for a Korean drama. ;-)
