He drunk but if you see the BTS and read some of their interviews, the effect only made him really could feel GSD's feeling and tipsy. He was still clear minded enough to discuss the scene with Yu and the director.
About the ad-lib part, they indeed have script, but Sam and Yu decided to throw the script, bcs this scene was really important.
I didn't expect this kind of production from HIStory's series. Maybe the HIStory's production team need to bring back Lin Pei Yu to be their screenwriter again... I'll try to watch until next episode before decide to drop it or not.

It's from the interview at the release party for the 2nd season. You could search it in youtube. The interviewer asked about his weight lost and why he cried in the viewing event for 2nd season. All the rumors about Sam started from the viewing event.
Regarding the drunk scene, they shot that scene a long time ago, and he didn't really drunk, and there was nothing happened, except their loud heartbeat. Sam is a professional actor, he knew what he did.
