So that we can understand what the side characters feel too. If its just on the Main leads it will just be a one dimensional relationship. Where as if we get both sides it makes more flavour and reason for their behavior and realationship.

If this is boring then I don't know what you will like. The pace is good and is interesting and is much different from the cliche drama.

Ig cause they went from through Mi Joo and she probably told the doctor that she will tell it herself. Also its a drama and we need plot to make it more emotional duh
