As someone who has gone to host clubs, and as someone who's first boyfriend was a manager at a host club (hehe), I feel I can answer this question. π
The number of drinks correspond to the amount you pay or the amount you bid to be able to spend time with the host. The price of one drink for this kind of bidding is usually fixed, and it's usually listed on the menu as "Host's drink" or "Gentleman's drink" or something like that. You can't just randomly say "I'm buying 1,000 beers at 20 baht per beer". If the "Host's drink" is like 100 baht per drink (random price just for explanation), then bidding 1,000 drinks means you pay 100,000.
Also, those 1,000 drinks are (usually) only specifically for you. Even if you have 4 other friends with you, if the bar has rules saying that drinks cannot be shared, you need to follow those rules. Also, a lot of host bars have entrance fees that may or may not be consumable (example, 1,000 baht entrance fee but you can consume that 1,000 by buying food or drinks). So even if you were sharing a table with 4 friends, each of them would still have to pay the entrance fee. Whether or not they would be allowed to share your 1,000 drinks is up to the bar, but ultimately you have to remember that the bar is a business that will prioritize making a profit. There's no way that the bar would allow you to buy 1,000 drinks and then distribute that to 1,000 people -- unless each of those people also paid the minimum entrance fee (because 1,000 people paying 1,000 baht each is 1M baht).
Also, remember that if someone is bidding those high amounts just to spend time with a bar host, then in all likelihood they really don't care about the drinks. They just want to spend money to have the host all for themselves. I've seen people bid for a high number of drinks only to order one drink and then just write-off the remaining amount as a tip. The time spent with the host is what they are really paying for, not the drinks.

Yes, this is how it is. Also, just to add, the drinks for the bar hosts are sometimes different from the drinks they give the customers. In a lot of the bars that are more experienced, the drinks for the bar hosts are extremely watered down. It's almost like the drinks are just the same color, but in essence they're as non-alcoholic as water. This is to ensure that the bar hosts don't get too drunk, and so that even if their customers insist that they actually drink, then it's not too much an issue.
