I work for Netflix and other streaming platforms and companies as a translator. We have the episodes for every (weekly) show, not just Kdramas at least a week in advance. Trust me, the subs are already done. I'm translating shows and movies for years and never heard about things like this when a translator only getting the episode on a release day. Only fan subbers doing that, I know because I did that too for years when I started learning Japanese.
I don't know much about VIKI, because I only used it for like a week or so, because the subs are utter garbage 90% of the times, especially in my language.

You can write a predictable story with likable characters and a meaningful story. Simple as that.
