Plus Hae Jin left the working qorld after she got married and ran the restaurant, very different career. And Jin Bong had so much plastic surgery, no one would recognize her. She got rid of all her pictures and stayed away from everyone who knew her old face, so yes, Cheol Jin may not know her "new face" and she uses Jin Joo around him. Take it for entertainment value, it's a daily drama....made for ahjummas, so a bit of makjang is sort of expected.
