My thoughts on both Part 1&2 (*minor spoilers*):This is probably the best written cdramas I have ever watched.…
I think it was because the rushed editing to push the drama out so quickly. I think they might have been still editing part 2 while part 1 was airing. The fact that the writing and the pace of the show has been consistent throughout almost the entire drama except for the last part indicates that.

The biting scene was in E47 at his (aunt) mother’s funeral.
It was because the second biting he pinned her down and bit her and she fought back. That might be too violent and intense for some viewers.
