I don't think the husband is inconsistent in his behavior. On earth he was bed ridden the majority of their marriage and she took care of him "for better or worse" better than most would have done. So when he got to heaven, now that he can do things on his own, he wants to take care of her but that's hard for her b/c of what she had to do to keep them afloat on earth.
The dynamic about the mother in law seems consistent. Hae Seok wants Nak Joon to see her POV and for him to take her side b/c he knows his mother wasn't always kind to her. His mother even tells him that but they still wants to maintain the order of things, That's the strange thing to me but on some level that make sense given the culture.

Agreed. Never look at or rely on ratings or reviews of shows I want to watch. And yes way to much of the dogs. Kim Hye Ja is amazing but I like the cast overall.
