I think that Yo Han is supposed to be something to be a dark hero similar to vincenzo like the evil destroying the devil if that makes sence. With Ga on I think he is just trying to get him on his side to see how disgusting the system is and to fight against them with it. You just have to play dirty to win and he wants to show that to Ga On and in order to do that he had to broke him
