Season 1 and Season 2 are quite independent. I believe the 3rd will be the same - same world, completely new story. So you can watch only Season 3, when it is aired. Although I would recommend watching both Season 1 and Season 2. every episode of this drama is a masterpiece.

Title Hellbound

why is this show overhated? I loved every minute of it and I’m so excited for the second season.

Because it's about beliefs, especially about biblical myth. And a lot of people, who are familiar with this myth, are oversensitive about any non-dogmatic reading of it. On the other hand, for one, who does not see references, the whole show seems meaningless.
