Because they entered a new timeline, right? Just like when they first entered Di Zhu/Manman’s body — they brought their memories with them. But Lu had just been pieced together, so she had no memories. She should still be influenced by her multiple rewinds though, so even though she has no memories in this new timeline, she feels an inexplicable trust toward Ji Ling from before transmigrating and in the star stone tunnel too.
And why I think the bridge is where he transmigrated: that gust of wind, the moment Lu turns back and the whole scene brightens. I think that’s the moment he crossed over. Then Ji Ling in front of the flower shop still said he’s just a shop assistant and can’t make decisions, because the original owner of the body was just a shop assistant.
