I see what you mean, but tbh who would like to be reminded of the grandma every episode lol. Even just seeing her hateful self for one episode was frustrating enough. Nita imo was purposely left hanging like that because tbh she served no purpose other than trying to save Sam's company. In the end Sam got to keep her company because grandma has come to agreement with her. Why the need for Nita? Also in terms of Sam Mon relationship the only rather jarring moment was the lack of time clarity. I guess it's due to the fact that if they want to maintain 'longer time' of them datinbg before any drama occur then it's pretty much filler episodes. Which is a waste of production money. So I can understand why they always have something going on in each episode.
I guess the only thing that I can definitely agree with you was about Tee and Yuki, but that's pretty much a blink and you miss it moment anyway since their relationship has no impact whatsoever to Sam and Mon relationship.

Maybe they could have interpolate Eangeai and Kemlong story from Mate into GAP but if it was just within GAP then their story is pretty much what Cher and Risa got. Tbh I prefer this way. It's a pity we couldnmt get a bigger storyline from Tee and Yuki but I like how GAP is remembered for strictly Sam and Mon. Maybe if they have a special episode we can see TeeYuki develop there.
