Agree with your review. Objectively, it is a decent simple drama. What it suffers however is mismatched expectations. I came into the drama hoping for it to be romance centric, but it ended up to be a healing drama instead.
This was my thoughts as well. I did not like how the original timeline was totally changed. What's wrong with it? Papa and mama successfully raised 2 kids and have a nice restaurant business. It was a difficult journey for them, but they have a good family. I don't see the revision to them being a chaebol family actually being superior.
The time travel should have simply served a purpose to teach Eun-Gyeol that his papa/mama lived their youth to the fullest, despite whatever hardships they faced. Eun-Gyeol would learn that he cannot change fates. He should also learn that papa/mama do not hate the world for their disabilities. They are actually cool people whole take it in their strides and look forward to do their best. He should learn not to belittle his parents and also to communicate with them properly on his aspirations to be a musician.
