I get where you are coming from. Actually, is a common question "Why do they felt for Tae?", and it has its own answer in the characters than the story.
DaOn is a people pleaser at the beginning (best development of the series, tho), so he met this guy who don't give a sh*t about others and he started to feel mesmerized. DaOn always looked for attention and Tae gave him exactly that without expecting anything in return, everyone else wanted something from him (SoHee is another exception). DaOn also treated SoHee somehow special since she is the only on whom he said no and could be himself, but she was too intense and that's why he couldn't never really liked her. In TaeKyung's case, he was also peacefully and warm so DaOn unintentionally started to felt for him. Then he struggles with the rumor thing and everything went down.
In Shinwoo's case, he explains to Tae that he is someone who is hard to express himself, so meeting Tae being so straightforward also catches his attention. It was a love at first sight thing that kept for too long. Tae always wanted to understand Shin and it lent Shin to be more attached to him.
Tae gave DaOn courage and gave ShinWoo understanding. In real life that are two things that we also look for in our partners.
Actually, it's more the director's fault. She wanted us to believe that DaOn still had a chance and that's why didn't show us properly the development of ShinTae's relationship.
Remember that the main story is settled in a 4 months run (Feb to may), Tae's crush on DaOn happened roughly in a month (mid March through mid April), and during that time Tae had already had a soft-spot for ShinWoo (is just that he didn't noticed, I can give you some examples later), and the rumors thing began on april 14' and since that day ShinWoo was supportive towards Tae, showed him how pure his love was and Tae started to really fall for Shin, it was a month without DaOn that led Tae get over his crush.
Remember that Tae said to DaOn that he "thought" we liked DaOn but -actually- he just wanted him to stop pursuing others attention and that he saw DaOn sadness, he wasn't in love, he loved his first friend. Then, he realizes Shinwoo's feelings and he understands what liked someone really means. Remember that love is a decision thing, when butterflies fly away from your stomach you have to endure your own feelings for your partner and be rational and loved them against all odds. That's what Tae did.
About the dates, is pointed out in chapter 13 when Tae fixed his cellphone, you can see the dates and infer everything else.
When I said that Tae had a soft spot for Shinwoo since the beginning it was due the clues that the directors leave during the series: - You can see that during the whole series Tae never jokes with anybody but Shinwoo, since the spider joke you can realize that Tae likes teasing Shin and is a thing that happens even 2 years later in the closure of the series. The only other people he joked with was Namgoong after the Karaoke but it was Tae supporting Shin's words and making fun of Namgoong at the same time, so Shin is still in the picture there. - Tae was the most straightforward boy in the whole series yet the only person with him talked carefully was Shin. You can noticed in the trip, when Shin said that he just wanted to take care of Tae, he didn't know how to ans and lied acting as if he was about to throw again so Shin let him alone. Also in the Mall, when Shin asked if Tae missed DaOn he carefully chooses his words so Shin wouldn't misunderstand them. That's something that didn't happen with anyone else.
And, when you said that Tae was doubtful about DaOn (of course, Chapter 15, isn't?) You can see that he really didn't acted or showed any interest towards DaOn as in the beginning of the series. Yes, he smiles a lot but you can compare his earlier smiles and that one and it was more friendly or fraternal than in loved. When DaOn gave him his support in the contest, he kept looking for Shin and until them he could continue, Shin was the only one he could lean on sincerely. When he said thanks to DaOn in the council room it wasn't a "Thanks for helping me" it was a "Thanks for liking me" in a rejective way as he teaches DaOn at the beginning of the chapter and is the same thing DaOn says to SoHee in the very next episode, so he was round and clear that he didn't wanted him. Obviously the last scene in chapter 15 with DaOn kiss was a total shocker but it was the production messing with us.
I get that you believe they didn't have a proper development but it was more that their love development was hinted a lot in order for us te not realize that Shin was always endgame.
I'm not defending him entirely, but, I just hate that people go rant because he wiping away his lips in the BTS but forget that in the same BTS Bass did wipe his lips too... but just because he did it first, people.went rant on him... that's just silly.

He also had a good relationship with SB Five and had a lot of promotions together
