However, there are several things to consider:
1) Regardless of CSS's choice, the engagement was going to be broken to honor the He family either by royal decree or by Lou family' decision. By taking the lead, CSS just avoided further humiliation for her family and kept LY out of trouble.
2) The He family was very close to LY. They considered him their son and brother. But they all died horribly, leaving just a daughter and a young son. LY was a little too revolted to take a step back but once reasoned, he understands himself he owes the He family to protect their last descendants.
3) The girl He and LY have been friends and engaged since childhood. Even though she had an arrogant attitude and tended to put him down, it can be seen there was affection between them. It's just that she had picked up some very bad habits and they needed to take a step back before they could find each other again. They will not be unhappy together.

The 5th princess is therefore the 5th daughter not the 5th child.
There is only the 2nd, the 3rd and the 5th princesses and 1rst, 3rd and 5th princes so the others boys must have died in their childhood same as the girls, or maybe the girls are married far away.

His guards are well trained and CSS isn't that low key. It is sure they saw her leave and some followed CSS while others warned LBY. He then found her where she was drinking and listened to part of her conversation (that's why some of the stuff she said comes in the argue the next day) before intervening to bring her back.

I think it illustrates that the girls who pursue him dont love him really but the good match he is. When he says only CSS asks if it hurts and not if he could still fight and ride horse it implies other girls asked this questions.

LBY is clearly in love with her since episode 6 as to their mutual romance, it officially begins at the end of episode 27 (basically the end of part 1).

One thing I regret and don't know if we'll ever have is seeing LBY go after CSS's grandmother and mother for their treatment of his fiancée.
But since the announcement of the engagement the grandmother has not shown disdain towards her granddaughter and the mother has also calmed down.
Because I admit I had a little trouble with his sentence: "you have a family, a father, a mother and brothers who treat you well, I never had that."
Certainly, for a few months CSS has found her family. Her brothers, her father and her cousin treat her well BUT she spent the first 15 years of her life without family and without love while LBY was raised by the Emperor in luxury while she nearly died several times from starvation or disease. And since the months when her family returned, she suffered her grandmother's indifference and her mother's psychological and physical abuse. She is not so lucky and I would have liked to see him recognize this wound from her past which is still present.
