It makes total sense when you find out the reason you lost your career is because of the women who stole your bf and then your job. She knew and acknowledges what she did was wrong, but i personally would want to see the world burn too at that point.

It's not that her mood changes, it's the setback of various events that keeps piling on in such a short timeframe, leaving her no room to adapt. The timeline of the entire series is less 6 months. In that time, she has to deal with breaking up in a long term relationship, to working with said new couple a couple of days later, to witness them kissing during a business training trip basically invading her private life further, to losing her job because of said couple. If you analyze certain things, it's pretty deep. Her psyche fits the situation and she was so angry she didn't know what to do other than get revenge, which she did regret and realize that it helps no one and hurts those around you as well.
