I also like to watch dramas with happy endings mainly because the way my life has been going it's definitely not going to have a happy ending (also, most people are not going have a happy ending because death is a cruel cruel thing), so the least I can do is watch and enjoy the dramas with happy endings.
One drama that comes to mind when you say unexpectedly good Drama and That is My Huckleberry Friends. I had little to no idea about the premise or cast of the drama but I found it...well, unexpectedly good.
Other than that I have to say Memorist. I thought it was just going to be yet another detective mystery story but I could't believe I would enjoy it that much.
You know what? if you didn't like the drama and have dropped it then Why would you need convincing to start them again? Everyone has their own preferences and if you didn't like it then you didn't like it. Like I couldn't watch The Untamed and no amount of convincing will make me watch it.

Finally someone who agrees with me. heh. As you have mentioned everyone has their own preferences. Looking at this article, I agree on some points you made and I agree on some points Minarii made. Mr. Sunshine was never a 9 points drama for me but at the same time, K2 also didn't deserve a 3.5. Overall this was a good article which showed a same thing from two different opposing perspective. This was a good read and I hope you continue this with other dramas as well.
This reminds of a drama that everyone was so in love with but I couldn't get into no matter how many times I tried. Yes, I am talking about a drama called "When the Camellia Blooms." I found it very boring and found none of the character interesting. All in all, i can say it was not my cup of tea. heh
Tbh main lead gave me major Fujiwara Tatsuya vibes, the way he looked and so on, reminded me of his younger days...…
Funny that you mentioned this. Fujiwara Tatsuya and Kang Dong Won has played the same character in different movies. Kang Dong Won in the original Haunters (2010) and Fujiwara Tatsuya played Kang Dong Won's role in Japanese remake Monsterz (2014).
The movie was not that interesting or exciting at all. It was just yet another zombie flick. If Train to Busan is perfect 10 then this might be 6 or even 5. Also, Peninsula is bad like this movie, but with higher budget.
I don't drop dramas, I skip them all together if the premise don't interest me. This has majorly decreased my watch rate. Now, I watch mostly 5-7 dramas in a year.
