I definitely think she's necessary to the story. IMO her past relationship with JW is basically mirroring his relationship with SJ - where one is the taker and the other gives. JW stated that in his previous relationship, even though times were hard, he was able to focus on something that made him happy (cooking) because he had his GF. But the GF was having trouble and complications of her own and he couldn't be there for her which lead to their breakup. I think JW sees a similarity between their relationships in this sense - he doesn't bring anything to the relationship and that's why he leaves SJ (even if it's not rational) rather than wear him out because SJ is the type to constantly give and care for JW - the gifts, the physical affection, trying to spend even the littlest of extra time with JW as possible to the point SJ was ignoring his health (like the scene he drives back home to be with JW instead of going to a hotel near his next activity). As for when JW says he thought about his ex a lot, I think it was only for the reason stated above: was being in a relationship with SJ detrimental to his partner like it was with his ex. At least that's my take on things.
