极限挑战 Go Fighting! Season 1 to 4 were pretty great overall. It's a game show similar to Running Man. I wouldn't recommend to watch Season 5 and 6, because the regular members and director were changed, hence the drop in quality.
朋友请听好 Welcome Back to Sound is a pretty good one too. It's about the regular hosts(He Jiong, Xie Na and Jackson Yee) and some other guest artists sharing and listening stories from people through phone calls and letters. Highly recommend this if you are looking for a relaxing and slow paced variety show.
我们的歌 Our Song is a singing variety show. Experienced singers were paired up with younger singers/ artists to compete with other duets of the same pairing form. A watch worthy singing variety show lately.
明星大侦探 Who's the Murderer, a variety show in which the members solve one fictional murder case per episode. It's a game show in which one of the members is the murderer and the others have to look for clues at the studio/ murder scene set up by the production team in order to reveal the murderer.
开讲啦 Voice, not sure if it is considered as a variety show but it was pretty good imho, so would just recommend it. The show invites a well-known figure (actors, singers, sportsmen, professors, etc.) to give a ~30 minutes talk at different universities. There are many themes/ topics on this and each speaker shared about different things/ stories. It's quite a long show with many speakers invited, so I only watched selected few speakers.
非正式会谈 Informal Talks is a show in which youth representatives from various countries share their thoughts on the discussed topics. One representative from each country (total ~15 iirc) and about one to two topics per episode. Quite an entertaining and informative show to watch.
我们战斗吧 Fighting Men, a game show similar to Go Fighting! It doesn't start very great imho but got better gradually. The interactions between the hosts are funny and entertaining to watch.
