Went to a cute little Mom and Pop Italian restaurant.  I had fettuccine with Alfredo sauce and grilled chicken.  Served with focaccia.  Carb heavy but yummy!

I was cleaning out the pantry and came across some items that were closing in on their expiration dates-raw cashews, egg noodles, and white beans. So I made a variation on a vegan white lasagna soup that I’ve cooked before. Happily, it tasted pretty good.  😊 

When I was cleaning out the pantry, I also came across some semi-sweet chocolate chips nearing their expiration date.  Normally, I'd use them to make brownies or something and then put some in the freezer and/or deliver goodie bags to the neighbors.  This time just for a lark I looked up candy recipes.  I am NOT a candy maker aside from the fudge I make at Christmas.  Found a recipe for 3 ingredients candy bars that are similar to Three Musketeers.  What the heck.


By the time I finished the kitchen was coated in chocolate as well as this Butterfly.😂  The candy came out well though it was a darker version than the milk chocolate in the recipe.  They were  also a little on the dull side so I ground some toasted pecans and rolled the mini-bars in them.  Going to find out if they freeze well because the recipe made quite a few. lol

Hubby and I celebrated our wedding anniversary a few days early and went out to lunch.  He wanted chicken fried steak and since I picked a place last time it was his turn.  We went someplace new that had good reviews.  

Since I can't eat beef, I had the chicken fried chicken.  Both of our meals were delicious and big enough that I will have two more lunches I can used my leftover chicken for.  I'm not a big bread person but their homemade rolls were really good.  Since we were celebrating, we had dessert.  Apple pie for me and cherry pie for him.  😋

Guess it’s just me. 😁 Bare bones quesadilla.  Was going to have avocado with it but it had gone bad
