I would like to throw into the mix "Sword Snow Stride". It is not as high fantasy as this one, but it also follows the "hero's journey" concept, where he increases his martial arts skill through the story. It is more grounded. It is also probably considered a slow-burning story. But it is hit differently, like you reading a book or you inside the book while you're watching it. It might not be your cup of tea because of it, but maybe a synopsis or a trailer will intrigue you. Doesn't hurt to try, who knows, maybe you'll find it enjoyable.

Then, around "Squid Game" boom, I ventured into Korean dramas, and they spoiled me with generous 2 (hour+ long) episodes per week with only a 24-hour apart in between eps schedule. And after "Alchemy of Souls", by recommendation from the comment section, I started to explore wuxia Cdramas, where episodes are released daily, and even 2 per day in most cases. Which is already the most generous offer you can get these days... But the new reality is, if drama hooks you up, it doesn't matter, you want a damn new episode NOW. xD

Started watching "A Record Of Mortal's Journey To Immortality" in parallel with drama, but not going beyond the current drama. Kinda unique and cool experience, since the animated version adds some missing parts from the live-action, adding more context to some scenes that felt rushed or ignored. But live-action also does a few things better, so they enrich each other. Fun.
If anyone wants to try: If you watched today's episode (15), you can safely watch "A Record Of Mortal's Journey To Immortality" through 18 without spoilers. From episode 17, you start noticing some deviations between versions, nothing major so far, just some small changes to scenes and their order (live-action started Yan Stronghold way sooner). And episode 19 has a small reunion scene \ tease, that might be only in tomorrow's episode (16) or ignored completely in live-action (for now?). According to your profile, you tolerated FL in "A Dream within a Dream" for 33 episodes. So, I don't think you will have any problem with FL here. I think, in general, slapstick humor in the first 3-4 episodes might be turned off for many. But the creators realized quickly and stopped pushing it.
It was a fun ride, I would say, to try and see for yourself. Just remember, this is a Comedy first, so you don't need to take characters seriously, unless the script tells you "this time you should."
Also, romance is not the main theme here. It is more like a "Hero's Journey" / "DnD Adventure" type of drama.
