Her character is supposed to be stoic (she's been the leader of a territory for centuries and has a lot of responsibility to shoulder). Most people like cold aloof MLs and cheerful FLs, I think. This starts as a cold FL and cheerful ML, but she loosens up around him in later eps.
(Don't expect her to suddenly become super-cheerful though. She's still a chief, protecting her "people")

Again, I don't see it as parent-child at all, but even master-disciple in this way seems wrong. The manhua that this is based on is even worse because he falls for her when he's a child. At least drama waited until he was an adult.

She didn't really parent him, though she certanly was around when he grew up. The problem is, since she's a spirit and he's a human, there will always be a difference in lifespan. If she was a kid when he was a kid, then she would still have a kiddy form even after he becomes an adult.

It depends on whether the tv channels acquired the drama. So Shen Li was shown on Hunan and best choice ever was…
I think it might depend on the target audience. A drama targeting younger audiences might be online, while one that targets those over 50 might be shown on TV. (This is my guess anyway)

To your second point, I think there *are* dramas where a man trains a girl from childhood and they fall in love after.
