The risk to become a soul eater is high, that's why they banished the practice. But I think it's possible to live like that. In the first episode, Jang Kang commented that "many shifters were turning wild lately" so I guess they were not supposed to go wild. My theory is that Jin Mu provoked the shifters to wild back then so he could force Kang to teach him the spell.

Yes, this is a high fantasy show, the writers created a whole a new lore. The costumes and make up are there to emphasize Daeho does not exist in our world, otherwise it would confuse people to think the story is part of korean folklore.
