The romance is in the kindness, the sweet moments, glances, sincere care, concern, protection, and forgiveness. Plus the storyline has only covered about 2-3 months. She had to fall out of love, he is grieving and wrestling with the death of his taste buds, the death of his mentor, the betrayal of someone near him. This is pretty normal for a 40 part drama to take a slow approach.

Personal perspective....He is use to putting up walls and shutting people out as a coping mechanism of self-protection. He's swimming through his dark night of the soul and LKS became a beacon of light. I don't think he fully knows what to do with it or it's impact on him until it is gone. Now that she has left, his awareness has been opened wide. Elise only amplified what is lost now that LKS is gone, he is fumbling around in the dark and he is uncomfortable. She brought him not only the support he needed to cook but also is awakening his heart to a new warmth and joy.
