I also thought that maybe it’s because he thought Dal wasn’t sure of him. He said “did I (not)?” when she told him she didn’t tell him because he didn’t like her which makes me assume he already knew he liked her. However, she told him she confessed to him hastily/impulsively when she got carried away that day which I’m thinking maybe made him scared she wasn’t sure of him and as we know he has abandonment issues from what happened with his mom. I’m thinking he probably sister zoned her because of that fear of abandonment and someone being unsure of him, but the whole blind date thing made him rethink everything.

*Major spoilers ahead* Saeon and Heejoo have known each other for the past 20 years and Saeon has secretly had feelings for her all this time. She first met him when she was nine and he is about six years older than her I believe. He used to be controlled down to what he was eating which caused him to have an ED. Heejoo used to put food he liked on her plate so he could eat it without his mom (who was controlling what he ate) noticing. That’s why he drank from her wine glass too (because he’s so used to eating off where she ate). But they were apart for a couple years because Saeon had been abroad for a long time, well into his 20’s. (These are all spoilers from the novel which may or may not be changed in the show).
When he came back he switched the bride (he was the one to request that he marry Heejoo instead of Heejoo’s step sister) he was going to marry to save her from another marriage and he family who didn't treat her well (this spoiler is both from what was seen in the drama and known in the novel).
