Totally understand where you're coming from; I felt a lot of the same way when I watched it (especially about the dog and lying) and there were quite a few people who also felt the same way. I think there are a lot of little things that show the ML loves her just as much (being willing to go to JM's fake wedding, climb the stairs in the park, rushing his IV drip, etc.), but in terms of your main complaints, there are a couple of things that the show could have done better to explain a couple parts in the novel to have helped. (Long explanation incoming)
The first thing is when it comes to JZ, I think his character could have been developed a bit more via some more internal dialogue to get across some of his own insecurities/character. He is someone who seems to take the stance that loved ones will leave you and it is better to quietly sacrifice and put his loved ones ahead of himself/not burden them. He has a couple good monologues after they get together about this such as talking about how he realized love isn't one person sacrificing alone, but rather two people weathering the storm together.
In the novel, he lost an entire leg instead of just nerve damage. That's a huge lifestyle change that he and his loved ones will need to adapt to. It makes sense if his character is one who believes in self sacrifice/not wanting to be a burden. You still get that not wanting to be a burden/make her choose between him and her mother in the show, but I do think in a way the lost leg vs just nerve damage also makes the not wanting to be a burden make a bit more sense. The breakup scene being a series of out of order flashbacks also didn't help, especially since they saved the scene where he was in a bunch of pain until the last flashback for some reason. Either way though, I can see why he wouldn't want JM to have to feel like she will need to take care of him and help him go through the recovery process in a way when she is fairly young while also having her mother also needing surgery in another country.
The other big thing that I really would have preferred for them to have kept in the show to help with the whole everyone lies to the FL is that in the novel, the dad also tells JZ to stay away because he also doesn't want JZ to be a burden to JM. Having your father figure also tell you the same thing you're thinking in terms of why you should stay away would definitely make me not want to reach back out. I only skimmed the later chapters, but if I'm remembering correctly, that sun and moon quote actually came from the dad. There's also a story with the dog for why JZ ended up taking him they also skipped over in the show that would have been nice to have seen in some capacity which also is why Lightining had a different name in Nanjing.
Overall though, I don't think JM gets enough credit for being a true yearner. People can say she is weak, silly, whatever, but I think her biggest strength is that she knows who she loves, is willing to pursue her loved one, and she will stay loyal to them. In that way, I think that's why the two are meant to be together. JZ has a big heart, but a lot of his childhood makes it such where he feels like he has to sacrifice his own happiness to not be a burden to his loved ones. He wants to face his challenges on his own to not burden his loved one; JM helped show him it's ok to rely on his loved one and that he doesn't need to sacrifice his own happiness on her behalf. She actually wants to face all of his challenges with him and I think that's where they sort of ended the show with both of them realizing that. The speech during their elopement I think summarizes the understanding they have of one another and what they learned from each other.

If you have issues with her voice or her acting, whatever, personal opinion. But like Precious said, if you don't like the lines, it doesn't make sense to blame her personally (or any actor/actress in general) because there is literally a script, a director, and editors who are the ones in charge of to say and what stays in the final cut.
And there were plenty of cringe lines throughout the show from different characters ("I like Chinese girls", "Cream is my least favorite" or whatever the line was during the JZ/SL fight). The cringe is part of the charm to SAL. The script itself also used some of the cringiness of JM's character to set up little plot details like the long con joke of JZ telling people she was both his wife and child because she is a picky eater and oversleeper and he indulges her.
It's also interesting when novel readers say she did a good job bringing the character to life and that's how her character acts in the novel, the people who criticize her character don't care and just blame her personally. Not only is there a script where JM is written the way she is, but the source material of the script also has her written that way.

1. Ep 15 they are officially together but there are plenty of sweet moments before then. 2-4. Yes, the technically break up and are separated for 6 years. There are reasons for the break up which is a point of dissent among viewers in terms of if the separation was justified. The separation lasts from episodes 20 to either 22 or 23 (sorry, I forget which episode they officially get back together). But after that, they stay together. 5. No 2ml or 2fl syndrome. The side characters pretty much stay side characters. There's a couple side characters that get a bit more mini storylines but those last all of a maybe 5-10 minutes for the most part. The main couple is the focus of the story. 6. No ex's. There is someone that is interested in the ML and tries to pursue him but he shuts that down pretty quickly and continuously. I would say she is also sort of controversial in terms of if people like her by the time her storyline comes to an end. 7. Happy ending, though they cut a lot of the spicy scenes in the later episodes and skipped the wedding scenes there are BTS videos for.

I think that’s one of the pros to adding Lin Sui as a character as it seemed like he helped JZ out post accident with things like a job and the apartment. I forget but the driver might also have been from him too in the show.
