[The Wanted Detective] is a drama that needs patience and understanding of several plot points (both major and minor). I was one who thought Xue Man's (FL) character needed improvement, but I was proven wrong. Her character has depth.
For someone who had faced a huge turning point of her life - a major tragedy - she's holding herself well. Sure she was a bit carefree and headstrong in the first 2 episodes, but that's the time when she was still under the protection and love of two family members (Bei Ming is basically family to her even at that point). You must remember she's human, and that she grew up without a mother or anyone similar throughout her whole lifetime. Her imperfections as a character is what makes her relatable to us (at least for me). Additionally, she literally had NO ONE beside her after going through that incident; her husband (to-be) was accused of being the ruthless serial killer of not only the big figures at court, but also her father.
Skipping to the poison trope you mentioned above, it is what we call a necessary PLOT TWIST, dear. There are real cures out in the real world where we treat poison with poison, and this drama made sure there are no loose ends. Just like how adding an acid to an alkali produces a neutralisation reaction, TWD has taken that logic into creating this as a plot device. It may look silly to some viewers, but remember, it is we, the VIEWERS, that have delved into THEIR WORLD; their world where Ye Sha, the cruel killer, exists, their world where WU XIA elements exist, and their world which have what our reality doesn't. And everything is a huge web of conspiracy led by Ye Sha. I do believe you remember the effects of taking the pills, which she did, while trapped inside that underground maze/tunnel. It gives you superhuman strength and speed, but has notable side effects that are similar to those of zombies, yes. She had to. Otherwise, the whole city will perish due to the poisoned stream water, and a second huge tragedy will occur. They were facing a do-or-die situation.
The weird ending? Well, this may just not be to your preference, but I do think it is an appropriate finale for a detective drama. It shows they have pride in their job and would put anything aside to bring back public order and justice to their community.

I'm not sure about that, but if they follow the manga, it's likely. This may also be just a movie, because the sequel wasn't very long compared to the main manga.
However, please take this with a grain of salt, cuz I'm only stating my thoughts. More reliable news will be published when its airing period is near. I'm sure S3 will turn out to be another great instalment to the AIB series, so let's look forward to it~ ^^

I also want to see them again in the AIB series too😢, but realistically thinking, it's better that way cuz AIB is set in a world between the living and afterlife. Guess we'll just have to watch S1+2 again if we miss them... ʕ´• ᴥ•̥`ʔ
About Chishiya and Kuina not returning in this new season, I think it may be because the manga S3 adapted on is a whole new storyline. I once took a peek at the sequel to the main AIB manga, and that one takes place years later.
