In that precise moment they both remember what Uk said to Mudeok in AOS1 "I know from the moment I saw you, you are my master" (in korean could sounds more similar resulting more obvious)
Then Cho Yeong say to him: you already felt this way once before. And Uk reply: yes, and In that moment her eyes were blooming like flowers (he is clearly referring to Mudeok's blue marked eyes: This scene quotation serve the porpuse to strengthen the end of the episode. )
Right after I think She is comparing herself to Mudeok, saying she doesn't care if she is the one who fell first for him while his previous love was the opposite, he fell /sparked for Mudeok first.
Basically their relashionship in AOS2 seems specular/mirrored from AOS1.
Anyway for those who don't speak korean I don't think it's easy to understand everything perfectly coz the adaptation could not be 100% accurate.
I don't think you missed anything, they never really explained what or how Jin Mu made her father a soulshifter.But…

Jang Kang arrests Shaman Choi, steal her book and learn AOS from it.
Jang Kang shifts the king's soul with his.
Jang Kang is too weak to perform the alchemy by his own so a week later he is forced to teach the alchemy to JinMu to get back his body.
9 month pass before Uk's birth, so in the meantime what's happened during this 9 months period?
• Jang Kang hides the stone at this point. • Jin Mu is already conspiring with Shaman Choi (Jin Woo Tak 's sister) • Jin Mu and Jin Woo Tak retrive the stone with (9-10yo?) BY's help and then they drown her. She becomes Mudeok. • Jin Mu curses Cho Chung (at this time Cho Yeoung is likely around 5-6 yo.)
