I liked the beginning and the end. The middle was a bit tough for me. Good acting, interesting interview style, but I got a bit frustrated with the characters. ,mainly the FL, in the middle. I like how it resolved as we learned more.
I totally agree. I started watching Asian dramas for this very reason. My American shows would end on cliff hangers and then there would never be a season 2. Or they kept a show running for years and it just got boring. I keep hoping that America will pick up the Asian format, but instead Asian shows are becoming more like American.
I'm a major fan for Eternal Love. I love historical/fantasy stories with happy endings. Other favorites include The story of Ming Lan, Lost Love in Times, The Legend of Fu Yao, The Moon that Embraces the Sun, and Bpoop Phaeh Saniwaat.
Your list contains most of my favorites. I'll have to give the others a try. My additions would be A Love so Beautiful, Ashes of Love, and Lost Love in Times.

I totally agree with you about not wanting to wait for a new season. It is my favorite part of Asian dramas. Plots can actually be completed. This American like format is how long can a show run instead and not conducive to concluding the story.

I find those types of dramas frustrating. Some are still good despite that issue, but I always prefer lots of time with the leads together. Here is hoping for more of those types this year!
