Prepare chopped ribs.
Bring water to a boil, blanch the ribs until they change color, then take them out and set aside.
Rinse the pot, heat some oil.
Add star anise, spices, scallions, ginger, and if you like spicy, some dried chili. Fry until fragrant.
Add the ribs back in.
Add light soy sauce and dark soy sauce until the color turns a nice deep brown.
Add enough water to cover the ribs.
Simmer on low heat for about 40–50 minutes with the lid on.

Of course I don’t mean you should drain yourself mentally. I mean: when you treat people sincerely, you’ll attract those on the same wavelength who treat you sincerely as well.

Cooking Q&A
There’s a question:
“Happy birthday, Rui Rui. I heard you cook really well. Could you share your unique home-style recipes for braised ribs and spicy crab?”
Okay, I’ll share them quickly here.
Braised Ribs
Prepare chopped ribs.
Bring water to a boil, blanch the ribs until they change color, then take them out and set aside.
Rinse the pot, heat some oil.
Add star anise, spices, scallions, ginger, and if you like spicy, some dried chili. Fry until fragrant.
Add the ribs back in.
Add light soy sauce and dark soy sauce until the color turns a nice deep brown.
Add enough water to cover the ribs.
Simmer on low heat for about 40–50 minutes with the lid on.
When the sauce is almost gone (but not completely dry), add some rock sugar and turn the heat to high to thicken the sauce.
That’s it – that’s my braised ribs.
Spicy Crab
Even simpler.
First cut the crab into pieces.
Dip the crab pieces in beaten egg, then coat with starch.
Deep-fry them once and set aside.
For the sauce: hotpot base, oyster sauce, light soy sauce, cooking wine.
No water – you can use beer instead. If you’re allergic to alcohol, you can also use water, the alcohol mostly evaporates anyway and just leaves fragrance.
Simmer everything together, then toss in the fried crab and stir-fry until the sauce clings to the crab and it’s almost dry. Done.
