spaghetti and sausage, something nice n easy since it was his night to cook

I made a cream of white bean soup from a NYT recipe and combined it with another online recipe to make a cream of cannellini and carrot soup drizzled with paprika oil.

Italian wedding soup and couple small slices of cheesecake (strawberry swirl and New York style)

linguine pasta with a creamy chanterelle mushroom and bacon sauce

probably gonna eat some toasts to have space for souvlakia at night where i will watch football with friends.

That sounds delicious! 🍲 I really like those flexible recipes where you can just use whatever is on hand. Last night I went super simple—Greek yogurt with honey and walnuts. Not as fancy as your soup, but quick and tasty. I’m definitely going to try your version with red lentils, I love when soup turns out thick and velvety.

Greek yogurt with honey and walnuts is delicious!

My soup was super easy because it used canned beans.    The most work was in chopping the veggies.  The onion and celery were sautéed.  It had a couple of steps with the soup part and then I pureed it in the blender, though an emulsion tool would have worked, too.  Most "cream" soups I make use no milk products, but I happened to have half-and-half left over from when family visited so I used it.

Red lentils are so easy to use because they break down nicely.  It would be slightly different from this soup but still yummy!  I bought a big bag of red lentils on sale and am always looking for new recipes for them.

Cheeseburger sliders and a passion fruit pineapple layered fruit bar

broccoli onion n peppers in alfredo pasta.   might see about using less pots/pans this time and see if boiling the frozen veggies turns out any decent since usually i sorta steam them in their own frozen jiuces in a pan,..  i'd rather have less dishes tho since we kept certain pans/pots packed due to lack of space.

I watched an episode of the Jazzy Vegetarian and decided to make her zucchini-nut loaf with mushroom "gravy".  There was a fair bit of prep work for it.  I served it with mashed potatoes.  Was going to make a salad to go with it but ran out of inclination to do so by the time everything else was cooking. After all that work for me it was just "meh".  Hubby really liked it though.  To soothe myself, it's time for a cup of tea and a couple of British biscuits and the latest ep of the Great British Bake-Off.

Leftover cream of carrot soup.  The Great British Bake Off inspired me and I made vegan cranberry lemon muffins.  Was worried how they would  turn out with no milk, eggs, or oil.   Were surprisingly tasty and not hockey puck heavy which I feared. lol

I decorated my profile page this month with food dramas/films/shows. I listed a few of the YouTube sites I like and a couple of other resources.

Yellow bean veggie stew with pasta, pear for dessert, and some leftover Halloween candy.  Apparently all the kids in our little neighborhood have grown up.  More mini-Snickers for us!
