Yea, it's all understandable. What's not understandable is mama Jin suddenly becoming so reasonable, when she was in denial, obsessive and very unreasonable for most of the time.

Master Lee is not immortal, but long lived. It's just that some people, like master Heo, still remember him as an old grandpa. He basically lives a second life now. He was a very old grandpa when he reached Hwansu level and shifted souls into a body of a boy. But as you can see that boy grew up and is growing old, it was mentioned he's around 40 years old now in his new body. He also practices some stuff like drinking chaste tea that may help him live into a ripe old age again.
So unless Uk also shifts his soul into a new body at some point or starts practicing master Lee's peculiar practices (unlikely) he's gonna grow old and die eventually.

He still gonna die of old age I think. But he does possess highest level of magic and can't die when killed, the ice stone will resurrect him.

Yea, JBY was kinda creepy and knew too much when she was a child, but still. Personally, I wanted mama Jin to die for her crazy stunts in both parts, but I guess her not really getting her daughter back is also a win. In the end, she's just a tired old woman who lost a lot. "Pitiful" was the word used in the drama itself and it fits her perfectly.

It's because of the format. Gotta keep the audience in suspence until the very last episodes. Pacing issues and rushed endings is a bane of many a kdrama. Could have been better, but it's not so bad here in AoS.
