They don’t wait to finish everything first. They film ahead, so while one couple is airing, they’ve already filmed most of it and are working on the next. The gaps you see are just for editing and promotion, not because they’re starting from zero each time.
From what I know, the trailer will most likely be released a week before the show, and I expect the poster will be released as well, though I'm not sure.
