It was never his intention and plan to love her again as Hou Chi. You have to remember that as Qing Mu, he don't have any memory of his past or any idea about Bai Jue's plan. When he is Qing Mu, he was not suppose to meet her and fall in love with her (Gu Jun said himself if you re-watch from ep 31-36). But destiny plays with them and make Qing Mu and Hou Chi meet each other.
Him wanting to be the sacrificial lamb stem from him loving in the first place so if he don't love at all then the sacrificing thing won't happen.

I rarely encounter sad endings with thai dramas, it's almost always a happily ever after. Chinese dramas don't know how to end their story. Most of the time it's always an open ending, it's rare to see a proper happy ending in C-drama lol
