That's true, it has become a routine for me too. Usually I only watch show after it finishes airing so I can know whether it's happy ending or not. This is the first Chinese show that I watch as it goes. Just because of William Chan and Yang Mi so I thought it would be good.

They actually showed Jianming at the end after all the names catching the feather so he was definitely alive rather than implied like in the conversation with the little prince.
About the age difference, I believe they have 7 years difference as people said Jianming wrote it in their wedding certificate in episode 34 I guess. So yes, he shouldered responsibilities since young so he matured quickly.

Yes, too bad a lot of scenes are cut although I believe not Tilan and Dixu because we see more of them being couple compared to others. I believe they cut a lot of Zhuoying scenes and even FJM and HS, not only the romance but plots related stuffs.

It's bad writing that Tilan's father was never shown or hinted that he wanted Dacheng except suddenly in episode 47.
They should put more of that in the show because I know there are some people who haven't forgiven him.
